Nutmeg Spice grown in Ceylon is considered to have an exotic flavour due to the growing conditions in this island nation renowned for spices.
Nutmeg spice (Muristica fragrance) is a native of Moluccas in east Indonesia and is reported to have been introduced to Ceylon in the early nineteenth century. Interestingly, the tree produces both Nutmeg spice and Mace spice. This is the only tropical fruit that is the source of two different spices. Both spices are strongly aromatic, resinous and warm in taste. Mace is generally said to have a finer aroma than nutmeg, but the difference is small. Nutmeg quickly loses its fragrance when ground therefore, the required amount should be grated from a whole nut immediately before use.
The sweet but slightly bitter flavor of Nutmeg adds character to vegetables. Several other commercial products are also produced from the tree, including Essential Oils, Extracted Oleoresins, and Nutmeg Butter.
